Meatloaf baked in a muffin pan, so it cooks fast and portions itself — figure two muffins per person. A flexible recipe: ketchup can stand in for the tomato sauce (the added sugar is the point), and you can fold in whatever vegetables you have on hand.
Ingredients
- 1 lb ground turkey or ground beef
- ⅓ cup breadcrumbs or oatmeal (oatmeal works well)
- ⅓ cup Parmesan cheese
- 1 egg
- 1 (8 oz) can tomato sauce, or about ¼ cup ketchup in the mix plus ¼ cup for the tops
- ½ tsp garlic powder
- Salt and pepper
- Several shakes (about 1 tsp) Worcestershire sauce
- A couple of handfuls of whatever other veggies you have (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils…)
Instructions
- Preheat the oven to 350°F.
- Mix all the ingredients together in a bowl, but use only about ¼ of the tomato sauce or ketchup in the meat mixture. Reserve the rest for the tops.
- Press the meat into muffin cups — you should get 8 to 10 out of this amount of meat.
- Top each with a dollop of the reserved tomato sauce or ketchup.
- Bake for 30–35 minutes.
- Serve two per person.
