Low-and-slow oven short ribs: salt-and-peppered, sealed tight under foil, and roasted until the bone separates from the meat — then finished with a quick BBQ-sauce broil for a caramelized top. (Sweet Baby Ray’s is the house favorite.)

Ingredients

  • 8 bone-in beef short ribs
  • 1 tsp salt
  • ¼ tsp pepper
  • ⅓ cup BBQ sauce

Instructions

  1. Preheat the oven to 275°F.
  2. Salt and pepper the beef. Lay the ribs bone side down in a baking dish, snuggled close together, and cover tightly with aluminum foil (two sheets works well).
  3. Cook about 3½–4 hours, until the bone starts to separate from the meat and the meat is tender.
  4. Uncover and drain off any liquid or excess fat (this keeps the grease from catching under a hot broiler — don’t skip it). Alternatively, move the ribs to a foil-lined baking sheet.
  5. Remove any excess fat from the top of the ribs with a butter knife.
  6. Baste with BBQ sauce and broil on low for 2–4 minutes, watching carefully, until caramelized.
