Jamroc 101 Caribbean Grill, Escondido.

I stopped in again and got the pork ribs. My buddy got the goat. Big Red Stripe, Jamaican wings to start. Service was fine, food was great.

They have a yellow sauce on the table. Scotch bonnets, as it turns out. If you’ve had Scotch bonnets — or their cousin the habanero — you know that yellow-orange color is the warning sign, not the invitation.

I tried the yellow sauce.

They could have just told me it was habanero. They had my attention. The disclaimer would have taken two seconds. Instead I discovered it directly, which is a more thorough education but also a more expensive one in terms of residual capsaicin.

The goat, by the way, was not bad. The joke is there and I took it in a previous review, but seriously — if you’ve never had goat in a Caribbean preparation, it’s worth trying. The habanero sauce is good on it too, in smaller doses than I used.

The Jamaican wings should come with a waiver. I say this admiringly.
